Zesty Beet Quinoa Wrap

Ingredients

  • 1 (8-oz) tub Beans for Beings Zesty Beet Dip
  • 1/2 red onion
  • 1/2 small head red cabbage
  • 1 large carrot
  • 1 head cilantro
  • 1 red bell pepper
  • 1 cucumber
  • 1 cup cooked quinoa
  • 1 avocado
  • 2 tortillas

Instructions

  1. Chop onion, cabbage, carrot, bell pepper, cucumber, and cilantro. Combine with cooked quinoa.
  2. Spread Zesty Beet Dip over two tortillas and top with quinoa mixture.
  3. Add sliced avocado and additional cilantro.
  4. Enjoy your delicious zesty wrap!
  5. Notes:

    • Cassava flour tortillas are my personal favorite for these wraps (I typically buy Coyotas Organic), but any tortilla brand you love will be great!
