Adzuki Bean Chocolate Truffles

These truffles are the absolute biggest crowd pleaser at gatherings and parties. They’re plant-based, refined sugar-free, and unbelievably easy to make. They’re also surprisingly decadent!
With just a can of Adzuki beans, a few pantry staples, and a food processor, you’ll have a delicious treat on your plate within minutes. These are one of my favorite healthy sweet treats. The beans give them a lovely creamy texture, and you would never know they’re in there!
What are Adzuki Beans?
Adzuki beans are delicate red beans famous in Japanese, Chinese, and Korean desserts. They’re small, slightly sweet, and are typically blended into a paste for mochi, buns, and pastries. They pair beautifully with chocolate.
Adzuki beans add a ton of protein and fiber to the recipe (21 g protein and 17.5 g fiber!), resulting in a dessert that will leave you feeling satisfied and deeply nourished. Many people find them easier to digest than many common beans!
Ingredients:
Adzuki Beans - The creamy base of the truffles. They add fiber, plant protein, and a naturally smooth texture that makes the truffles rich and satisfying without the need for butter or cream.
Almonds - Bring structure and a nutty flavor. They add healthy fats and create a firm, fudgy texture.
Cacao Powder - Gives the truffles their deep chocolate flavor. It also brings antioxidants and balances the sweetness.
Maple Syrup - A natural sweetener that adds sweetness and helps bind the mixture together.
Vanilla Extract - Enhances the chocolate flavor and adds warmth and depth to the truffles.
Cinnamon - Adds a subtle spice that complements the chocolate and maple

Adzuki Bean Chocolate Truffles
Ingredients
- 1 (15-oz) can adzuki beans, drained and rinsed
- 1 cup almonds
- 1/2 cup cacao powder
- 1/2 cup maple syrup
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- 1 cup Medjool dates (approx 8-10)
Instructions
- Drain and rinse adzuki beans.
- Add adzuki beans, almonds, cacao powder, maple syrup, vanilla extract, and cinnamon to a food processor. Blend until the mixture becomes thick and mostly smooth.
- With the food processor running, add the Medjool dates one at a time, allowing each to fully incorporate before adding the next. This prevents the dates from clumping together.
- Scoop about 2 tablespoons of the mixture and roll into balls with your hands. This recipe makes approximately 20 balls.
- Roll the balls in cacao powder or shredded coconut Store in an airtight container in the fridge for up to a week or the freezer for up to 6 months.
Notes
- If you can’t find adzuki beans, the best substitutes would be navy beans or black beans.
- Cashews, pecans, or walnuts can be used in place of almonds, or in combination. Walnuts will give more of an earthy flavor.
- Date syrup or agave can be substituted for maple syrup.
