Ingredients:

  • 1 jar Spicy Jalapeño Black Beans

  • 6 small corn tortillas

  • 1 cup shredded cabbage

  • 1 tbsp lime juice

  • ½ tsp agave or honey

  • 2 tbsp vegan mayo or Greek yogurt

  • ½ avocado (sliced)

  • Fresh cilantro for garnish

Instructions:

  1. Mix cabbage, lime juice, mayo/yogurt, and agave. Chill for 10 min.

  2. Heat tortillas on a dry skillet until soft and warm.

  3. Warm the beans slightly or serve room temp.

  4. Assemble: add beans to tortilla, top with slaw, avocado, and cilantro.

  5. Serve with lime wedges.
