Zesty Beet Bean Bowl with Tahini Drizzle

Ingredients:
1 jar Zesty Beet Navy Beans
1 cup cooked quinoa
1 cup baby spinach or arugula
½ cup roasted sweet potatoes (cubed)
1 tbsp tahini
1 tbsp lemon juice
1 tsp maple syrup
Water to thin
Instructions:
In a bowl, layer quinoa, greens, sweet potatoes, and Zesty Beet Beans.
In a small bowl, whisk tahini, lemon juice, maple syrup, and water until smooth.
Drizzle dressing over the bowl.
Optional: top with pumpkin seeds or feta. Serve chilled or at room temp.
