Ingredients:

  • 1 jar Zesty Beet Navy Beans

  • 1 cup cooked quinoa

  • 1 cup baby spinach or arugula

  • ½ cup roasted sweet potatoes (cubed)

  • 1 tbsp tahini

  • 1 tbsp lemon juice

  • 1 tsp maple syrup

  • Water to thin

Instructions:

  1. In a bowl, layer quinoa, greens, sweet potatoes, and Zesty Beet Beans.

  2. In a small bowl, whisk tahini, lemon juice, maple syrup, and water until smooth.

  3. Drizzle dressing over the bowl.

  4. Optional: top with pumpkin seeds or feta. Serve chilled or at room temp.
